Pumpkin Panna Cotta

After a day of wine and great food, we want to finish with the familiar flavors of a Thanksgiving dessert, the only day of the year where most of us will consume pumpkin. Rather than facing a final challenge at the end of this much anticipated feast, we like to offer our guests a light and clean panna cotta, an egg-free dessert, set only with gelatin and garnished before serving. Prepared the day before for ease of service, this pumpkin dessert is a simple yet elegant take on a familiar combination of flavors.

Ingredients

  • ¼ ounce envelope unflavored powdered gelatin

  • ¾ cup milk

  • 1¾ cup heavy cream

  • ¼ cup dark brown sugar

  • 1 tsp salt

  • ½ tsp vanilla extract

  • ¾ cup canned pumpkin puree (no spices added)

  • ½ tsp ground ginger

  • ¼ tsp nutmeg

  • ¼ tsp cloves

  • ½ tsp cinnamon

  • Candied pepitas, whipped cream or pure maple syrup for garnish

Instructions

To start, bloom the gelatin in ¼ cup of milk for 15 minutes.

In a medium sized pot on medium low heat, whisk together milk with gelatin, remaining milk, heavy cream, brown sugar, vanilla extract, salt and canned pumpkin puree. Stir in ground ginger, clove, nutmeg, cinnamon and maple syrup. While whisking, bring the mixture to 205-210 degrees. Remove from heat and divide the mixture into six ramekins or any small dish of your choosing. Tap ramekin on the table once or twice to remove any air bubbles. Refrigerate to set (about 3-4 hours), wrapping them in plastic wrap as soon as they are cool. The panna cottas may be made the day prior. Remove from the refrigerator 10 minutes prior to serving and finish with a simple garnish of candied pepitas, whipped cream or a drizzle of maple syrup.
