Toast the pistachios and pumpkin seeds separately; allow to cool. Rough chop the pistachios.
In a medium bowl, combine the fromage blanc, chopped pistachios, kosher salt, dried thyme and black pepper. Mix well until smooth and creamy.
Taste and adjust seasoning as needed.
Transfer the spread to a serving bowl or plate.
Drizzle with pumpkin seed oil, then sprinkle with toasted pumpkin seeds and additional toasted pistachios.
Top with crispy fried coppa or prosciutto slices for added texture and savoriness.
