This elegant dessert pays tribute to the classic French Savarin, elevated with a golden soak of orange-Jordan Chardonnay syrup and a delicate vanilla mousse. Balanced by a vibrant apricot compote, it’s a refined finale for any celebratory meal. We recommend pairing with the Jordan Sauternes.

Savarin

Dissolve the yeast in warm milk, then add all-purpose flour (portion 1). Cover with plastic wrap and set in a warm place to rise for about 1 hour.

In a mixing bowl, add honey. Then all purpose flour (portion 2) and salt to the sponge. Add eggs and yolks. After eggs are incorporated, add butter a little at a time. Mix until the batter is smooth and pulls away from the sides of the bowl.

Pipe 27 grams into sprayed savarin molds. Cover with sprayed plastic wrap and rest until they’re risen slightly. Preheat oven to 325 degrees. For small molds, bake for 7-10 minutes, until light golden.

Unmold cakes and poke holes on both sides. Soak the cakes in the orange syrup. The syrup should be halfway up the cake. They will float until the cake is soaked.


Orange Syrup

Make a syrup with water and sugar by boiling for two minutes. Ensure sugar is dissolved.

Add chardonnay and boil for another minute. Add zest, infuse for 30 minutes.

Add orange juice, stir and strain. Then add scraped vanilla bean.


Vanilla Mousse

Bloom gelatin in ice water. Scald milk and sugar. Whisk hot milk into egg yolks.

Over a double boiler, cook to 83 degrees Celsius, stirring constantly. Add gelatin and strain. Whisk cream to medium peaks. Fold in cream when egg mixture is cool.

Transfer to molds or onto a plastic-lined half sheet tray.

Freeze overnight and unmold or portion the following day.

 

Dried Apricot Compote

Thinly slice apricots. Mix with jam and syrup.

 

Serving Suggestions

Slice apricots thinly and place in the center with a few pieces of apricot slices protruding out of the center. Place cake in center of apricots, with the mousse placed on top, slightly off center so the apricots are visible. As an alternative, the cakes can also be served with Chantilly cream. Enjoy with a glass of the 2022 Jordan Sauternes.
