1987 Jordan Cabernet Sauvignon
The 1987 vintage, one of Tom Jordan’s favorites, marked our first use of Cabernet Franc; we added 2% to brighten the nose. In 2009, we can taste the effect of two decades of cellaring: dried plums, bell pepper, slight stewed tomato, and soft tannins. After 20 minutes the bouquet fades to a tart and acidic finish. The 750mL is past its prime. For larger formats, drink now.
