Hillside fruit from our estate delivered lovely fruit characters with balance and structure found in the 2000 Jordan Sonoma County Cabernet Sauvignon.
The 2000 growing season was marked by calm weather, with an early bloom in the beginning of May followed by the development of a healthy, well-balanced crop. An autumnal “Indian summer” nudged the fruit to full maturity. The quality of the Cabernet Sauvignon and Merlot grapes at harvest was outstanding, with soft tannins and intense flavors.
This aged Cabernet Sauvignon is silky, elegant and delicious. Though a little shy on the palate, it's still showing a lot of complexity with intriguing white pepper, flowers and herb notes. Lingering cherry and dusty strawberry fruit dance on the palate. Drink the 750mL and 1.5L now through 2015. The 3L and 6L will continue to mature through 2030 and well beyond.
Jordan Cabernet Sauvignon is considered a great choice for food pairing due to its balance of fruit, acidity and lower alcohol. This Bordeaux style blend of Cabernet Sauvignon is very versatile on the dinner table, from meat and poultry dishes to pastas and grilled vegetables.

One day of extended skin contact and 12 days of primary fermentation in stainless steel tanks, followed by malolactic fermentation for four weeks in upright oak tanks
Select French and American oak coopers
After 12 months of aging in 65% French and 35% American oak barrels and six months in upright oak tanks, the wine was bottled and held for another 18 months prior to release
