The 1991 Jordan Cabernet Sauvignon, an elegant well balanced wine, epitomizes soft tannins and accessible fruit while continuing our fifteen year history of producing luscious Bordeaux style Cabernet Sauvignons. Vivid and brilliant garnet in color, this distinctive wine gives the immediate visual impression of being full bodied and long lasting. The bouquet of forward fruit and the aromas of cassis and ripe black cherry evolve into a more complex and balanced impression of spice, black currant and cedar -- all of which is supported by a strong structure of predominantly French oak. The expansive, rich, velvety and intricate fruit flavors meld on the palate with those of nutmeg, clove and soft, woodsy essences. Using grapes from seventeen year-old vines grown exclusively in Jordan's Alexander Valley Vineyards, the 1991 Cabernet Sauvignon is a blend of 81.2% Cabernet Sauvignon, 16.0% Merlot, and 2.8% Cabernet Franc. This exquisite wine, in which youthful tannins are balanced gently with the fruit, has aged for one year in French and American oak barrels. The wine had two additional years of bottle aging in the Jordan cellars before being released.
