Each passing year sees increased maturity in the vines of Jordan's estate vineyard as varietal fruit aromas and flavors deepen. Jordan's 1988 Estate Bottled Cabernet Sauvignon offers layers of cherry, cassis and subtle oak character. Cool, slow fermentation retains the deep fruit qualities while awarding full and plentiful tannins to the wine. Two years of aging in French and American oak evolved the complexity and elegance so distinctive of Jordan's Estate Bottled Cabernet Sauvignon. Two further years of bottle aging assure proper development of the wine at the time of its release to market. The attractive bouquet, supple tannins and generous fruit of this vintage invite early drinking. Its fine balance and firm structure will enhance the aging potential well into the close of the century.

FERMENTATION
10 days in stainless steel to complete the yeast fermentation: 5 days in stainless steel for extended skin contact, followed by 1 week in large oak cooperage while completing malolactic fermentation. Free run blended with press fractions.
