1985 is a rare, exceptional vintage year in California, one that winemakers and winegrowers dream of, yet seldom ever see. Jordan's mature estate vineyards produced the finest fruit of their history, and from this fruit winemaker, Rob Davis produced the 1985 Cabernet Sauvignon, an elegant, finely balanced wine in the distinctive Jordan style. Continuity is apparent in this vintage which the winemaker composed by blending approximately 12% Merlot with the Cabernet Sauvignon. The wine aged in small French and American cooperage for twelve months. This wine has a fresh, berry aroma with undertones of cherry, and the taste is soft and round with ample, rich tannins and a lasting finish. Characteristic of Cabernet Sauvignon from Alexander Valley, Jordan's 1985 exhibits dominant cassis flavors. A fine Bordeaux style wine, this Cabernet Sauvignon reminds us of two of our previous vintages; it has the gentle fruitiness of the 1978 combined with the backbone and aging potential of the 1979 vintage. The full fruit flavors and soft tannins make the 1985 Cabernet Sauvignon a delicious wine to drink at a youthful age, yet the complex structure of this Jordan classic assures development and enjoyment for many years to come.

7 days in stainless steel to complete yeast fermentation; 8 days in stainless steel for extended skin contact, followed by 2 weeks in large oak cooperage while completing malolactic fermentation. Free run blended with press fractions.
