Jordan Cabernet Sauvignon

Shop for Jordan Cabernet Sauvignon
Seasonal climatic conditions are very important in the development of flavors in the grapes that go into producing a particular style of wine. This is reflected in our 1981 Cabernet, a wine that captured the intensity of a short, but very warm, harvest season. The aroma of cassis like character is very intense, with less herbaceousness being evident than in previous vintages. This fruit appeal combines well with the flavors achieved by ageing the wine for two years in French and American oak. The tannins are much softer and less pronounced than in our earlier vintages, making the wine pleasant to drink at an early age. The 1981 Cabernet is elegant in style, displaying great finesse and full fruit flavors.

FERMENTATION
8 days in stainless steel, followed by four weeks in large oak cooperage while completing malolactic fermentation; free run blended with press fractions

12 months in 54% French oak and 46% American oak
